Gingerbread Men

Ingredients:

1 cup Crisco (vegetable shortening)
1 cup sugar
1 egg
1 cup molasses
2 tablespoons. vinegar
5 cups sifted all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 to 3 teaspoons. ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Directions:

Cream shortening and sugar. Beat in egg, molasses, and vinegar. Sift together dry ingredients and blend into creamed mixture. Chill 3 hours. Roll dough on lightly floured surface to 1/8 inch thick. Cut in shapes. Place 1 inch apart on cookie sheet. Bake at 375 degrees F for 5 to 6 minutes. Cool slightly on cookie sheet and then remove to rack.
Decorate with your favorite frosting. Add very small candies for the
eyes, mouth, and buttons. Tooooo cute!!
Makes about 5 dozen.

Brownies

Ingredients:

3/4 cup butter or margarine
4 oz. unsweetened chocolate
4 eggs
2 cups sugar
1 cup flour
8 oz. cream cheese, softened
1 jar raspberry preserves

Directions:

Melt the butter and the chocolate together. Let cool. Meanwhile, beat the cream cheese with one of the eggs, then set aside. Add the other 3 eggs, beaten, to the cooled chocolate mixture. Then add the sugar and the flour. Pour half this batter into an ungreased 9" x 13" pan. Top with the cream cheese mixture, then with the preserves. Spread on the rest of the batter. Bake at 350 degrees F for 30-40 minutes.

Christmas Coleslaw

Ingredients:

2 cups green cabbage, shredded
2 cups red cabbage, shredded
1 green pepper, grated
1 red pepper, grated
1 red onion, grated
1 cup mayonnaise
1/2 cup oil & vinegar dressing
2 carrots, grated

Directions:

Toss vegetables in a glass bowl. Combine mayonnaise and dressing and
pour over and toss gently. Cover & chill overnight.
Yields: 1 serving

Chocolate Chip Mini Cheesecakes

Ingredients:

Bowl 1:
1.2 lb of cream cheese
1 egg
1/3 cup sugar
Mix these ingredients together
Add 1 1/4 cups of mini chocolate chips

Bowl 2:
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 teaspoon vanilla
1 teaspoon baking soda
1 cup water
1/3 cup oil
Mix these ingredients together

Directions:

Put 1 teaspoon of cream cheese mixture from bowl 1 per mini muffin cup. Fill each cup 2/3 full with mixture in bowl 2. Bake at 350 degrees F for about 20 minutes.
Makes about 4 dozen
